The special evening will showcase a collaborative menu that blends the signature styles and creativity of both restaurants through a playful, ingredient-driven dining experience.

In keeping with HAGS' innovative approach to hospitality, food for the collaborative dinner will be offered on a pay-what-you-can basis. Located in Manhattan's East Village, HAGS has earned national recognition for its hyper-seasonal approach to cooking, thoughtful hospitality, and inventive tasting menus and inclusive dining initiatives, including its acclaimed pay-what-you-can brunch program. For one night only, HAGS Executive Chef & Partner Telly Justice will join forces with Garcia and the Dolfy’s kitchen to create a menu that melds HAGS’ whimsical style with Dolfy’s fire-forward approach to Basque cuisine.

Guests can expect a curated menu featuring standout dishes, including an array of inventive small plates and entrées designed exclusively for the collaboration.

Menu highlights include:

  • Rice bread with cultured butter, whipped brie, and honey
  • Charred leeks with soubise sauce, chili crisp, chili oil, and confit egg yolk
  • Oysters with celery mignonette
  • Little gem salad with green goddess dressing, market vegetables, and panisse croutons
  • Pavé de Jamón Ibérico
