ABOUT:

Discover an unparalleled culinary experience at Nobu New Orleans. Nestled in the historic city of New Orleans, Chef Nobu will bring his signature cuisine to Louisiana, setting a new standard for elevated Japanese dining in the heart of the Big Easy.

Restaurant design and influence: Rockwell Group’s collaboration with Chef Nobu Matsuhisa began with one small restaurant in Manhattan’s Tribeca neighborhood. There, we conceived a design concept inspired by Chef Nobu’s innovative cooking and the culture of the Japanese countryside, where the chef was born and raised. Thirty years and many Nobu restaurants and hotels later, Nobu will be reinvented in New Orleans (the brand’s first expansion into Louisiana), situated within the newly created Caesars New Orleans.

For the restaurant, Rockwell Group’s design inspiration was twofold. We turned first to the lush natural environment of the New Orleans area. Throughout the bar and lounge area, sushi bar, and main dining space, the traditional Nobu furnishings and materials reflect the local region with a color palette characterized by deep green millwork and stone details, burnt orange upholstery, and accented with shades of dark grey and black. The second source of inspiration was our original design for the restaurant at Nobu Hotel Caesars Palace Las Vegas—the brand’s very first Nobu Hotel—where a series of pods line the main dining room, creating anticipation and a moment of discovery for guests. We recreated these pods in Nobu New Orleans, where they are inspired by the shape of the roots of the cypress trees native to the Louisiana wetlands. The pod’s wooden frames, draped with a woven leather lattice, create an enveloped, semi-private space. They allow for a brief withdraw from the casino floor while maintaining a visual connection to the bustling dining room.

Menu: The foundation of the menu is our signature dishes, which Chef Nobu created himself. Following the execution of these dishes, the chefs are allowed the opportunity to develop dishes that highlight local ingredients and techniques. All recipes follow Chef Nobu’s philosophy and are approved by him.

Our chefs will start by executing our signature dishes, while developing an understanding of the Nobu vision and philosophy. Yes, these signature dishes include Crispy Rice with Spicy Tuna, Black Cod Miso, and Yellowtail Jalapeno. After that we will then focus on exclusive dishes to make the New Orleans experience unique.
