Emmylou’s, the beloved barbecue stall within St. Roch Market, is transforming into a new fried chicken concept coined Buttermillk starting Monday, March 1. Located at 2381 St. Claude Ave, Buttermilk’s new stall will be situated closer to the front door and was previously occupied by Fritai, a Haitian street food concept. Within the chef-driven hall, Buttermilk looks to offer a simple, yet delicious, menu focused on flavorful dishes that aren’t overly complicated.

With over a decade of barbecue experience, owner Shannon Bingham opened Emmylou’s in January 2020, serving Central Texas-style smoked meats and classic barbecue sides. Bingham previously served as pitmaster and chef de cuisine at Blue Oak BBQ and played an instrumental role in the restaurant’s booming success, including three Top 5 finishes at Hogs for the Cause and Grand Champion in 2017. Seven weeks after opening Emmylou’s in St. Roch Market, Bingham was forced to close his stall for nearly four months due to the pandemic. Upon reopening, Emmylou’s began offering chicken as a one-off special; customers were immediately responsive and the vision for Buttermilk blossomed. “Outside of barbecue, I’ve always leaned towards fried chicken — it’s well-received and makes people feel comfortable,” says Bingham. “It’s really no surprise the trajectory of my career has led me down this path, and I’m really excited to bring this new concept to life.”

At Buttermilk, guests can expect a condensed menu stacked with familiar favorites that span breakfast, sandwiches, chicken fingers, snacks, salads and more. Although menu mainstays reign supreme, Bingham will create off-menu specials and seasonal sides that play into the concept’s Southern-roots. In addition, guests can look forward to extended breakfast options in the coming weeks. Menu items will include:

Biscuits with white sausage gravy

Fried chicken, slaw, pickles, honey mustard
Hot chicken, lettuce, pickles, ranch
Fried chicken, bacon, muenster, fancy sauce
Grilled chicken, lettuce, pickles, potato chips, ranch
Fried chicken, pimento cheese, candied jalapeño, BBQ sauce

Shaved kale and cabbage, citrus pickled onions, parmesan, fried saltines, buttermilk dressing (add fried or grilled chicken)

To commemorate the stall’s final days as Emmylou’s, Bingham will serve the opening menu beginning February 22, featuring popular items including Frito Pie (smoked beef chili, cheddar, pickled onion, cilantro and Fritos), charcuterie with housemade pickles and mustard, and smoked meats (beef cheeks, turkey breast, pulled pork, jalapeno cheddar sausage, St. Louis spare ribs). “I’ve been able to reinvent the food stand and oversee the concept’s evolution because patrons are open to new opportunities; I am so appreciative of this community’s steadfast encouragement.”

Upon opening March 1, Buttermilk will offer dine-in and carryout, with delivery forthcoming.
