Cognac tasting room attendees will have a unique opportunity to taste a broad selection of Cognacs from multiple Cognac producers, big and small, in an informal walk-around format. Tales of the Cocktail participants will be able to explore the many styles and categories of Cognac in an effort to expand their knowledge of this classic spirit as well as to stimulate their uses of Cognac in cocktails.
Upon entering the tasting room, attendees will be handed a new cocktail called "Summit" whose preparation will be demonstrated by mixologist Jim Meehan of PDT in NYC. The "Summit" was conceived of by a group of top international mixologists during the 2008 International Cognac Summit, www.cognacsummit.com.
Attendance from the who's who of the cocktail scene is anticipated for this unique tasting. All attendees will receive a copy of the new CD Rom developed by the Bureau National of Cognac.
The Cognac Discovery room will be hosted by Jack Robertiello, wine and spirits writer and consultant, and Jean-Louis Carbonnier, representing the Bureau National of Cognac. Both of them will address questions from attendees and will also host a seminar entitled "Cognac, from Vines to Shaker."

Old New Orleans Rum is an expression of the grand Louisiana culinary tradition--an artfully presented premium product of excellent value, handcrafted in small batches with the finest local ingredients.
Rich blackstrap molasses from sugar cane grown in the rich soil of the Mississippi Delta is used to create the four award-winning Old New Orleans Rums produced at Celebration Distillation, the oldest premium rum distillery in the United States.
The first distillation of rum took place on the sugar cane plantations of the Caribbean in the 17th century. The contemporary buffet was first used in the 18th century in France. Celebration Distillation will be fusing the two in a Modern Day Old New Orleans Rum Mojito Buffet, (pronounced "boo-fay" down here in the South).
Local Mixologist Alan Walter and Old New Orleans Rum Brand Ambassador Johnny Culpepper will be on staff, serving spoonfuls of seasonal fruits or a dash of exotic herbs and spices to be mixed with Old New Orleans Rum to create make-it-yourself Mojitos tailored to the Old New Orleans Rum tasting room guests. Gin as a category has an incredible history. Tracking the evolution of the gin category is entertaining and insightful. In modern day context and given the recent explosion of new gin brands the issue arises more and more as to why there are not more sub categories of gin. What is a new gin if it does not qualify by law as a London Dry, is not made within the city walls of Plymouth, nor is a Dutch Genever? What do we call it? Does it even need a label? a sub category? And how is that new sub category defined? on botanical selection? on geographical location of the distillery? on the type of distillation technique used?

The cocktail had its birth in the 1800's, but what spirit related drinks did people drink prior to that? This session will take you on a tour of drinks from the 1600's. We'll look at early spirits, like rum and gin, then move to the precursors of bitters and absinthe and discuss Cock-ale. We'll also look at some obscure drinks like "Plague Waters" and early cordials which are now common cocktail ingredients.

Gin, rum, brandy, rye whiskey, maybe even vodkas; they all trace their origins to the Low Countries of the present-day Netherlands, Belgium, and Luxembourg. From medieval times to the present day: from bishops in Groningen via single-malt genever, brandy and wine to the famed bitters of Beerenburg and wormwood spirit Els la Vera - and even wine from Limburg! Fluent Dutch speaker, Irishman, Amsterdam saloonkeeper and bar trainer Philip Duff has lived in Holland for 14 years and spends a large part of his time researching the region's drinks legacy. There will be a special emphasis on the role of the Dutch East India Company (VOC), which at it's peak in 1669 had 50,000 employees around the world and was responsible for the worldwide spread of genever, the first grain distillery in the USA, the first rum distillation in South America and the first brandy distillation in South Africa. Join Leblon Cachaça and the United States Bartenders Guild as some of the top bartenders muddle their way to victory at this year's Caipirinha Competition. 18 bartenders from 9 cities have been chosen to represent their chapter to compete for the top prize and a golden muddler to bring back to the winning city.
Hosted by The Modern Mixologist, Tony Abou-Ganim, each city will serve their top two cocktails as judges, Naren Young (New York Cities BoBo Restaurant), Junior Merino (The Liquid Chef), Alex Atala (Chef of Brazils #1 rated restaurant D.O.M and South America's #1 Ranked Chef), Francine Cohen (Editor of Food and Beverage Journal, media partner for the National USBG Caipirinha competition) and one surprise guest, taste and sip their way through creative cocktails until one winner is crowned.
